Ingredients for our simple cendol
- Between eight to 10 pandan leaves (large)
- 600ml (20 oz) water
- 100g (3-4 oz) rice flour
- 50g (2 oz) tapioca flour
- 10g (1/2 oz mung bean flour) – optional
- Sugar syrup – You’ll need 1 pack of gula melaka, 28g (1oz) brown sugar, 20g water (1 oz) plus pandan leaves according to taste.
Recipe
1. Cut the pandan leaves into small pieces and add to a blender with about 600ml of water. Blend at the highest speed until there are no leaf chunks left. Use a mesh strainer to separate the pandan water and pour it into a saucepan. Add rice, tapioca flour and mung bean flour (if using) and stir this mixture until all the flour is distributed. Then simply simmer this mixture on a low heat to allow it to thicken. This may take up to 15 minutes as all water needs to evaporate.
2. Once your sauce has cooled, it’s a simple matter to make your noodles. Set up a bowl of water with ice cubes, then just use a strainer or potato ricer to force your mix into the chilled water. Hey presto! Delicious, homemade cendol noodles in next to no time!
3. For the palm sugar sauce, you simply need to put all ingredients into a saucepan and add the required pandan leaves to suit your taste. Then turn on the heat and cook the mixture until all the sugar and gula melaka has melted down fully. Turn the heat to the lowest setting and simmer your sauce to give it a smoother texture and higher taste.
