Whether M&S kicked off this trend for gin & tonic pancakes is a moot point. You may have noticed your local grocery store stocked a novel lemon, gin and tonic pancake sauce for Pancake Day 2019. Whether the store hoped to cash in on Valentine’s Day, too, or just wanted to make Pancake Day more mainstream, who knows? We’re certainly drawn to adding this novel flavour to pancakes though, and letting the boozy syrup soak into them and add flavour. You can still add sugar syrups, cream, lemon and sugar to your boozy pancakes, but a more sophisticated touch would be lime, blueberry and mint garnish. The great thing about this trend for gin & tonic pancake desserts, though, is that whipping up your batter beforehand, then frying your pancakes for dinner guests, is such a quick and simple pudding solution!
How a gin & tonic pancake is made
Use your basic pancake batter mix for this dessert but add around 200ml of tonic and 50ml of gin to the mixture. When you’ve piled the cooked pancakes onto a serving plate, pour additional gin syrup mix over the top. Let the unique gin syrup flavouring soak into the pancakes before serving with your choice of garnish and syrups. The G&T syrup simply consists of equal proportions of sugar and gin, combined with fresh lime juice. This is boiled until a thick syrup consistency is obtained.
